The design of the frypot is in direct relation to what is
being fried in the kitchen. The type of frypot determines
whether there is a cold zone. This is an area of the pot
filled with oil that isn’t heated to cooking temperature,
allowing sediment to settle there without burning.
Burned breading, batter and small pieces of food will
taint the oil they are in, which can ruin the flavor of the
food and reduce the life of the cooking oil.
