Pizza prep tables feature a raised rail for food pans and a
wide work area of about 20” deep to accommodate a large
pizza. Rails are kept cold with cold wall technology, forced
air technology or a combination of both. This cold air
surrounds the ingredients to ensure proper temperatures
between 33° to 41°F.
