DISHWASHER TEMPS
High Temperature vs Low Temperature
High-temperature machines require temperatures to reach at least 150°F, while the final rinse must hit 180°F. Hot water is used to
sanitize the wares and less chemicals are required.
Low-temperature machines reach temperatures between 120° and 140°F. Chemicals are required for proper sanitizing of all wares.
